Caramelised Onions
An excellent accompaniment to the hamburger in bun.
Ingredients: (serves 4)
2 tbsp Olive oil.
3 large onions (red or white), peeled and sliced.
Pinch of salt.
2 tbsp soft brown sugar.
1-2 tbsp balsamic vinegar.
Method
- Heat the oil in a large, deep frying pan.
- Add the onions, with the pinch of salt, and cook for about 15-20 minutes.
- Stir occasionally to prevent them from burning but allow them to get a golden appearance.
- Add the sugar and vinegar. Cook for a further 5 minutes until the mix has become sticky and the sugar has dissolved and the vinegar evaporated.
- The Onions are now ready to serve.
